Plan the perfect cabinet
- Professional scooping cabinets tend to vary a little in temperature, with the right side being slightly colder than the left.
- So, for better scooping consistency, store 'softer' products like sorbets to the right and 'harder' products like Triple Chocolate to the left.
- It's always a good idea, though, to test which works best for your cabinet by moving flavours around to see which is easiest to scoop and where.
- Keep the most popular flavours (e.g. Vanilla/Strawberry) in a place that's the most comfortable for you to scoop from.
- Make sure you have a good mix of plain flavours, such as Vanilla, Strawberry and Banana, for the kids, and more exotic varieties, like New Mint Crunch, Greek Yoghurt & Honey and Tiramisu, for the adults.
- Visual impact is vital for good sales, so maintain a good mix of colour in the cabinet.
- Rotate your flavours on a regular basis, keeping top sellers but alternating other, more unusual flavours to maintain consumer interest.
