Carte DO'r Strawberry ice cream

Carte D’Or Strawberry Ice Cream Shortbread Serves 6
Ingredients
For the shortbread:
175g Flora Buttery
75g caster sugar
175g plain flour
75g fine semolina
Icing sugar
6 scoops Carte D’Or strawberry ice cream
Method
Preheat the oven to 150ºc
Place all the ingredients in a food processor and blend until smooth. Remove the dough and on a floured surface, roll into a thick sausage shape. Cut into 1cm slices. Layout each disk on a greased and lined baking sheet and bake in the oven for around 50 minutes or until golden brown. Dust with a little icing sugar.
To serve, place a disk of shortbread on a serving plate, add a scoop of Carte D’Or Strawberry ice cream, top with a second shortbread biscuit, gently press down to make a sandwich. Serve with summer fruits and/or coulis if required.
