Lemon Posset in a Chocolate Case with
Carte D’Or Vanilla Ice Cream
Serves 6
Ingredients
For the posset:
300ml Elmlea whipping cream
75g caster sugar
Zest and juice of lemons
Method
Bring the cream and sugar to a gentle boil in a saucepan and continue to boil for 2-3 minutes. Add the lemon juice and zest, whisk well, strain through a sieve into a jug and leave to cool. Refrigerate.
To serve, fill a chocolate case, snobinette or place a spoonful of posset on a serving plate. Accompany with 1 or 2 scoops of Carte D’Or Vanilla ice cream. Decorate with chocolate shavings.
